The great importance of milk and its products to the development and health, is highlighted by the World Health Organization, recommending
the daily consumption of 2 or 3 servings of dairy as part of a balanced diet.
MILK
Milk is rich in nutrients, which are found in high concentration and are easily assimilated by the body. The Food and Agriculture Organisation
(FAO) in order to emphasize the value of milk, created the World Milk Day which is celebrated on June 1st.
Milk has a high nutritional value because it contains proteins, carbohydrates, fats, salts and vitamins. It is the unique food in nature containing
a high biological importance protein, casein. The peptides derived from casein enhance the body's natural defenses, regulate blood pressure, help
to cope with stress, and have soothing properties. It is also the only food that contains the carbohydrate lactose, an important energy source
for the body.
It consists of vitamins A, B1, B2, B3, B5, B9, B12, C, D, K, while its calcium content that is easily absorbed by the body, among other
things, protects the carcass against osteoporosis and cares dental health.
YOGURT
As a derivative of milk yogurt is rich in nutrients - fat, carbohydrates, protein, calcium and vitamins. Its concentrated form makes it a
significant source of calcium, while the B vitamins increase with the effect of active bacteria that features, facilitating the intestinal
absorption of calcium, phosphorus, magnesium and the digestion.
Yoghurt is a digestible food even for people who cannot drink milk since it contains 20-30% less lactose. It strengthens the immune system,
helps in proper functioning of the digestive system and acts therapeutically for the body.
CHEESE
Cheeses regardless of their type, retain some basic characteristics that make them valuable in the human diet.
They are high in calcium and phosphorus which are beneficial for the bone health. They contain significant amounts of B vitamins, which are
essential for the smooth functioning of the nervous system and the maintenance of strong memory.
Moreover, they are an excellent source of selenium, which due to its action, strengthens the immune system. Compared with other milk products,
cheese contains smaller amounts of lactose, making it suitable for those having intolerance.
BUTTER
Butter contains proteins, fats, vitamins, calcium and antioxidants. It contains no carbohydrates and it is rich in calories and fats, of which
the largest proportion are saturated.
Additionally , butter has omega 3 fatty acids, vitamin E, beta carotene, vitamins C, D, A, lecithin, iodine, and choline, imparting anti-oxidant
properties that are beneficial for human body.
Fats are crucial in the absorption of vitamins and are essential for the synthesis of various brain structures, while simultaneously contributing
to many body functions (maintenance of temperature, storage and energy production). About 30% of calories we need daily should come from fat
(10% of which are saturated fats).
